Satisfying, moist, wholesome and healthy, these blueberry muffins are truly perfect. Made with simple ingredients, you will love these muffins! These blueberry muffins can make the perfect breakfast. They have actually been a staple of mine for the last 3 years, yep almost every morning. I always double batch this recipe and keep a supply in my freezer!
To make a well rounded breakfast I have a muffin with some plain yogurt combined with hemp seeds, chia seeds and ground flax. You can also enjoy these as a midday day snack.

Servings: Makes 12
2 cups all-purpose flour
1 cup whole wheat flour 1 1/2 Tbsp baking powder Pinch of salt 1/3 cup sugar 1 egg
1 cup 1 Tbsp milk or milk alternative
1/2 cup oil
1/2 cup Water + 1/4 water 1-2 cups frozen blueberries+ 1 Tbsp flour
1. Preheat the oven to 375°F. 2. In a large bowl, mix together flours, baking powder, sugar and salt.
3. Mix all wet ingredient in separate bowl. 4. Combine wet ingredients with dry.
5. In separate small bowl, cover blueberries in 1 Tbsp flour and fold in. 6. Fill the muffin cups almost to the top and bake in middle of the oven for ~ 27 minutes, until the muffins have risen and are lightly brown. 7. Cool 3-4 minutes in muffin tin then cool further on cake rack. Enjoy!
If using cows milk, the higher the fat percentage used the more moist the muffin.
